Step 1: Heat oven + prep tray
Set oven to **425°F / 220°C** (200°C fan). Put a large roasting pan or sturdy rimmed sheet pan in the oven to preheat (this helps the potatoes start crisping immediately).
Step 2: Season the chicken (flavor armor)
In a bowl, mix **butter, 4 minced garlic cloves, salt, pepper, paprika, and thyme**.
Step 3: Parboil potatoes (secret to crisp)
