Step 1: Boil the carrots
Add carrots to a saucepan, cover with water, and bring to a boil. Cook until fork-tender, 8–10 minutes. Drain, season with salt and pepper, and cover to keep warm.
Step 2: Season the chicken
Pat chicken dry and season both sides generously with salt and pepper.
Step 3: Sear the chicken
