Classic crispy-tender pork tossed in a glossy, tangy-sweet sauce with juicy pineapple and peppers, served over fluffy steamed rice.
Step 1: Cook the rice
Rinse rice in a sieve until the water runs mostly clear. Add rice and 2 cups water to a pot with a tight lid. Bring to a boil over high heat, then immediately cover and reduce to low. Cook 12 minutes, then remove from heat and rest (lid on) 10 minutes. Fluff with a fork.
Step 2: Make the sweet & sour sauce
In a bowl, whisk ketchup, vinegar, sugar, soy sauce, pineapple juice (or water), and 1 tbsp cornstarch until smooth. Set aside (re-whisk right before using; cornstarch settles).
Step 3: Season and coat the pork
Pat pork dry (this helps it crisp). Toss with salt, pepper, and garlic powder. Add egg and mix until coated. Sprinkle over 1/2 cup cornstarch and toss until you see a sticky, shaggy coating (it should cling and look a bit clumpy—that’s perfect for crunch).
Step 4: Fry the pork (crispy!)
Heat 1 1/2–2 inches of oil in a deep skillet or small pot to **350°F / 175°C**. Fry pork in batches (don’t crowd) for **3–4 minutes**, turning, until light golden and cooked through. Drain on a rack (best) or paper towels.
Step 5: Stir-fry the veg
Pour off frying oil (carefully) and wipe the pan clean, or use a wok/large skillet. Heat 1 tbsp oil over high heat. Add onion and peppers; stir-fry **2–3 minutes** until lightly charred at edges but still crisp-tender. Add pineapple and toss **30 seconds** just to warm.
Step 6: Thicken the sauce
Give sauce a final whisk, then pour into the pan. Stir constantly until it turns glossy and thick enough to coat a spoon, **1–2 minutes**.
Step 7: Toss and serve immediately
Add crispy pork to the sauce and toss quickly just until coated (about **20–30 seconds**—don’t over-stir or it softens). Serve over steamed rice while hot and crunchy.
