A glossy, savory-sweet teriyaki beef bowl served over fluffy rice with a punchy ginger-soy sauce that clings to every bite.
Step 1: Cook the rice
Rinse rice in a bowl until the water runs mostly clear (3–4 rinses). Drain well. Add to a pot or rice cooker with the water.
Step 2: Make the teriyaki sauce
In a small bowl, mix **soy sauce, mirin, sake, sugar, garlic, and ginger** until the sugar mostly dissolves. Set aside.
Step 3: Sear the beef
Heat a large skillet over **high heat** until very hot. Add **oil** and swirl. Add beef in a single layer (work in batches if needed) and sear **30–60 seconds per side** until browned at the edges but still a little pink in the middle. Transfer to a plate.
Step 4: Reduce the sauce to glossy
Lower heat to **medium**. Pour the teriyaki sauce into the skillet and simmer **2–4 minutes** until it turns slightly syrupy and coats the back of a spoon.
Step 5: Finish the beef
Return beef (and any juices) to the pan. Toss for **30–60 seconds** just until coated and warmed through. Stir in **sesame oil** (if using). Taste and add **black pepper** as desired.
Step 6: Assemble the bowls
Divide rice between bowls. Pile teriyaki beef on top and spoon over extra sauce. Finish with **scallions** and **sesame seeds** if you have them.
