Glossy, caramelised teriyaki chicken over steaming rice with a crisp-sweet cucumber salad — classic, family-friendly Japanese comfort food.
Step 1: Cook the rice
Rinse rice in a sieve until the water runs mostly clear. Cook with 3 cups water (rice cooker ideal; or stovetop: bring to simmer, cover, cook 12 minutes on low, then rest off heat 10 minutes). Fluff with a paddle/fork, keep covered.
Step 2: Make the cucumber salad
Toss cucumbers with salt and sugar, then add rice vinegar and sesame oil. Let it sit while you cook the chicken (it should taste lightly sweet-tangy and crisp). If a lot of water pools, drain off a little before serving.
Step 3: Mix the teriyaki sauce
In a bowl, stir soy sauce, mirin, sake, brown sugar, ginger, and garlic until the sugar dissolves.

Step 5: Glaze and reduce
Pour in the teriyaki sauce. Bring to a lively simmer, then lower to medium. Spoon sauce over the chicken as it bubbles, 5–7 minutes, until the chicken is cooked through and the sauce is **thick, glossy, and coats the back of a spoon**. (If it’s reducing too fast, add a splash of water; if too thin, simmer 1–2 minutes longer.)
Step 6: Rest and slice
Transfer chicken to a board and rest 3 minutes. Slice into bite-size pieces. Return chicken to the pan and toss through the glaze so every piece is lacquered.
Step 7: Assemble donburi
Spoon rice into bowls. Pile on teriyaki chicken, drizzle extra sauce from the pan, add cucumber salad on the side, then finish with spring onions and sesame seeds. A crack of black pepper on top is surprisingly good.
