Step 1: Fry the curry paste
Heat oil in a wok or saucepan over medium-high heat. Add green curry paste and cook, stirring constantly, until fragrant and slightly darker, about 1–2 minutes. *You’re looking for the paste to “split” a little as it fries—this builds depth.*
Step 2: Crack in the coconut
Add about 1/3 of the coconut milk and stir well. Simmer 2–3 minutes until glossy and thick, with oil lightly separating on the surface.
Step 3: Simmer the curry sauce
Pour in remaining coconut milk and the water. Bring to a gentle simmer (not a hard boil) for 2 minutes.
Step 4: Cook the chicken

Step 5: Add vegetables
