Classic Italian tiramisù with a creamy mascarpone filling, coffee-soaked ladyfingers, and a dramatic walnut “coat” all over the outside for crunch in every bite.
Step 1: Toast & chop the walnuts
Toast walnuts in a dry pan over medium heat until they smell nutty and a shade darker, 3–5 minutes, shaking often (don’t let them scorch). Cool completely, then chop finely (you want “crumbs” that will stick, not big chunks). Set aside.
Step 2: Make the coffee dip
Mix cooled espresso with Marsala (if using). Pour into a wide shallow bowl so you can dip quickly and evenly.
Step 3: Whip yolks + sugar
In a bowl, whisk egg yolks and sugar until pale, thick, and ribbon-y, about 3–5 minutes (electric mixer helps). The mixture should fall back on itself in thick ribbons and look noticeably lighter.
Step 4: Fold in mascarpone
Add cold mascarpone to the yolk mixture. Beat on low just until smooth and combined (overbeating can make it loosen/grainy). Add vanilla and a pinch of salt.
Step 5: Whip egg whites
In a clean, dry bowl, whip egg whites to stiff peaks (peaks stand straight with a glossy look).
Step 6: Combine the cream
Fold 1/3 of the egg whites into the mascarpone mixture to loosen it, then gently fold in the rest until no white streaks remain. Keep it airy—use a spatula and big, sweeping folds.
Step 7: Assemble (quick dips!)
Lightly grease or line an 8-inch (20cm) square tin or a loaf tin for a taller tiramisù.
Step 8: Chill to set
Cover and refrigerate at least **6 hours** (overnight is even better). It should slice cleanly and feel set, not sloshy.
Step 9: Walnut-coat the outside
Carefully lift and unmould onto a serving plate (use baking paper “handles” if you lined it). Using clean hands, press chopped walnuts all over the sides (and, if you want the full “coated” look, lightly press on top edges too—leave the cocoa-dusted center visible or coat it completely, your call). Chill 20 minutes to firm before slicing.
