The ultimate holiday showstopper—juicy layers of turkey, duck, and chicken roasted into one dramatic, sliceable centerpiece with crisp skin and rich pan juices.
Step 1: Debone the turkey (keep the skin intact)
Place turkey breast-side down. Using a boning knife, cut along one side of the backbone from tail to neck, staying tight to the bones. Repeat on the other side and remove the backbone (save for stock if you like). Work the knife along the rib cage to free the meat, then carefully pop the thigh joints out of their sockets. Scrape and cut along the breastbone and wishbone to release the breast meat while keeping the skin as intact as possible. Remove all bones, leaving a “butterflied” sheet of turkey meat/skin. Pat dry.
Step 2: Debone the duck and chicken
Repeat the same approach for duck and chicken: cut out the backbone, work the knife along the carcass, pop joints, and free the meat into flat sheets. For duck, expect more fat—trim only big, hard knobs; leave some fat for flavor. Pat both dry.
Step 3: Make the seasoning rub
In a bowl, mix salt, pepper, paprika, thyme, sage, onion powder, and cayenne (if using). Drizzle in oil and mix into a thick paste.
Step 4: Season each layer
Lay the turkey skin-side down. Spread about half the rub evenly over the meat (especially thighs/legs). Lay the duck on top, skin-side down, centered, and spread most of the remaining rub over the duck meat. Lay the chicken on top, skin-side down, and season it lightly with any rub left (or just a pinch more salt and pepper).
Step 5: Roll and tie (the key to neat slices)
Starting from one long side, roll the stacked meats up tightly into a log, like a giant roulade. Tuck in any thin flaps as you roll. Tie with butcher’s twine every 1 1/2 inches (4 cm) along the length, then tie one long piece lengthwise to secure. The roll should feel firm and even.
Step 6: Chill for shape (highly recommended)
Place the tied turducken seam-side down on a tray and refrigerate uncovered for 8–24 hours if you can (even 1–2 hours helps). This dries the skin so it browns better and makes the roast hold together.
Step 7: Roast low and slow
Heat oven to **325°F / 165°C**. Put the turducken on a rack in a roasting pan, seam-side down. Roast for about **3 1/2 to 4 1/2 hours**, rotating the pan once, until the **center of the roast (deepest part)** reaches **160°F / 71°C**. (It will rise to 165°F / 74°C as it rests.)
Step 8: Crisp the skin at the end
Increase oven to **425°F / 220°C** and roast **10–20 minutes** until the skin is deeply golden and crisp. If it’s already browned, skip or shorten this step—watch closely.
Step 9: Rest (don’t skip!)
Transfer to a board, tent loosely with foil, and rest **30–45 minutes**. This sets the layers so slices stay clean and juicy.
Step 10: Slice and serve
Cut off and discard twine. Slice into **1/2–3/4 inch (1.25–2 cm)** rounds with a sharp carving knife. You should see distinct rings of turkey, duck, and chicken.
