Golden, flaky-topped meat pies packed with big, tender beef chunks in a rich, peppery gravy — the kind you eat one-handed with sauce and zero regrets.
Step 1: Toss & brown the beef
Pat beef dry (helps it brown), then toss with flour, salt, and pepper. Heat 1 tbsp oil in a heavy pot over high heat. Brown beef in 2–3 batches (don’t crowd it) until you get deep golden edges, about **3–4 minutes per batch**. Transfer to a bowl.
Step 2: Build the flavour base
Reduce to medium heat, add remaining 1 tbsp oil, then sauté onion with a pinch of salt until soft and sweet, **6–8 minutes**. Add garlic and cook until fragrant, **30 seconds**. Stir in tomato paste and cook **1 minute** (it should darken slightly — that’s flavour).
Step 3: Make the big-beef gravy
Add Worcestershire, beef stock, water, thyme, and bay leaves. Scrape the bottom of the pot to dissolve the browned bits (that’s your gravy gold). Tip the beef and any juices back in.
Step 4: Slow cook until spoon-tender
Bring to a gentle simmer, then cover with a lid slightly ajar. Cook on low for **1 hour 30 minutes**, stirring every now and then. Uncover and simmer another **20–30 minutes** until the beef is tender and the gravy is reduced and glossy.
Step 5: Thicken (only if needed) & cool
If the gravy is still thin, stir in the cornflour slurry and simmer **1–2 minutes** until thickened. Taste and adjust salt/pepper. Cool the filling **at least 45 minutes** (warm filling melts pastry and ruins the flake).
Step 6: Line the tins
Heat oven to **200°C (180°C fan)**. Grease a **6-hole jumbo muffin tin** (or pie tins). Press shortcrust pastry into the holes, letting it come up and slightly over the rim. Prick bases with a fork.
Step 7: Blind-bake the bases
Bake shortcrust bases **10 minutes** until just set (not browned). This helps stop soggy bottoms.
Step 8: Fill & cap with puff pastry
Spoon in cooled chunky beef filling, mounding slightly (don’t overfill to the point it can’t seal). Brush pastry edges with egg wash. Lay puff pastry over the top, press to seal, then trim excess. Crimp with a fork for a classic look. Cut a small slit in the top for steam.
Step 9: Bake until properly golden
Brush tops generously with egg wash. Bake **20–25 minutes** until puffed and deep golden brown. Rest **5–10 minutes** before removing — the filling will be molten.
