Sticky-sweet BBQ pork piled into soft sliders with a crisp, tangy slaw and bright salsa for the ultimate contrast of smoky, crunchy, and fresh.
Step 1: Season the pork
Pat pork dry. Toss with oil, salt, pepper, smoked paprika, cumin, and garlic powder until evenly coated.
Step 2: Sear for flavor
Heat a large skillet over high heat. Sear pork in a single layer (work in batches if needed) until deeply browned on all sides, about 6–8 minutes total. Browning = better BBQ flavor.
Step 3: Make it saucy and tender
Reduce heat to medium-low. Add BBQ sauce, vinegar, and brown sugar (if using). Stir well, scraping up browned bits. Cover and simmer gently until pork is cooked through and tender, 12–15 minutes, stirring once or twice.
Step 4: Shred and glaze
Turn off heat. Use two forks to shred the pork right in the pan (or shred on a board, then return to sauce). Simmer uncovered for 2–3 minutes to reduce sauce until glossy and sticky.
Step 5: Crunchy slaw
In a bowl, whisk mayo, vinegar, sugar, salt, and pepper. Add cabbage and carrot; toss until coated. Let stand 10 minutes (it softens just a touch but stays crunchy).
Step 6: Fresh salsa
Combine tomatoes, red onion, jalapeño (if using), cilantro (if using), lime juice, salt, and pepper. Let sit 5–10 minutes to get juicy, then spoon off excess liquid if you want it less drippy on sliders.
Step 7: Toast buns (optional but worth it)
Split buns. Lightly butter cut sides and toast in a skillet over medium heat until golden, 1–2 minutes.
Step 8: Assemble sliders
Pile BBQ pork onto bun bottoms. Top with a generous pinch of slaw, then a spoonful of salsa. Cap with bun tops and serve immediately.
