All the nostalgic fast-food flavors—soft bun, tangy special sauce, melty cheese, and double patties—scaled up into a bigger, juicier homemade version that still tastes like the real thing.
Step 1: Make the special sauce
In a small bowl, mix mayonnaise, chopped pickles, ketchup, mustard, vinegar (or pickle juice), paprika, garlic powder, onion powder, plus a pinch of salt and pepper. Taste and adjust: it should be tangy, slightly sweet, and “snackable.” Refrigerate while you cook (even 10 minutes helps it meld).
Step 2: Prep the Big Mac-style toppings
Shred the iceberg lettuce finely (smaller shreds = more authentic). Slice pickles and onions thin so they don’t overpower. Set everything by the stove—this burger comes together fast.
Step 3: Form thin, wide patties (the key to “bought one” texture)
Divide beef into 4 equal balls (about 110g / 1/4 lb each). Place each ball between two sheets of baking paper and press into very thin patties about 12–13cm / 5 inches wide (they’ll shrink). Season both sides with salt and pepper right before cooking.
Step 4: Toast the buns like fast food
Heat a large skillet or griddle over medium heat. Add a little oil, then toast the cut sides of the buns until lightly golden, about 1–2 minutes. You want “soft with a thin crisp,” not crunchy.
Step 5: Cook patties & melt cheese
Turn heat up to medium-high. Add patties and cook 1–2 minutes until browned on the bottom. Flip, place a slice of American cheese on each patty, and cook 1 minute more. They should be thin and cooked through, with lacy browned edges.
Step 6: Assemble the double-decker (bigger, but still classic)
Build each burger in this order:
Step 7: Press & rest (the secret to the fast-food bite)
Very gently press the burger for 5 seconds (don’t crush it), then let it sit 1 minute so everything “locks in” and slices cleanly.
