Soft baked fruit layered over a wholesome oat base with minimal added sugar, making a fiber-rich, lunchbox-friendly snack that’s sweet, succulent, and satisfying without being heavy.
Step 1: Prep the pan & oven
Heat oven to **180°C** (160°C fan). Line an **20 cm square pan** with baking paper so it overhangs on two sides (easy lift-out).
Step 2: Cook down the fruit (quick jammy filling)
Add **grated apple (300 g)**, **blackberries (200 g)**, **lemon juice (10 g)**, **cinnamon (5 g)**, **salt (1 g)** and **honey/maple (25 g, optional)** to a saucepan. Cook on medium heat for **6–8 minutes**, stirring often, until the fruit is **soft, glossy, and slightly thickened** (the pan shouldn’t look watery).
Step 3: Mix the oat base
In a bowl, mix **rolled oats (180 g)**, **whole wheat flour (120 g)** and **baking powder (6 g)**. Add **oil (60 g)**, **applesauce (80 g)** and **egg (50 g)**. Stir until you have a **crumbly, damp mixture** that holds together when squeezed.
Step 4: Press in the base
Tip **about 2/3** of the oat mixture into the lined pan. Press firmly into an even layer (use the base of a cup). This helps the bars slice neatly for lunchboxes.
Step 5: Add filling & crumble topping
Spread the warm fruit mixture evenly over the base. Sprinkle the remaining oat mixture over the top, pinching a few clumps for a “crumble” look.
Step 6: Bake
Bake for **28–32 minutes** until the top is **lightly golden** and the edges look **set**.
Step 7: Cool (this is the secret to clean slices)
Cool in the pan for **20 minutes**, then lift out using paper overhang. Cool **fully** (at least **1 hour**) before slicing into **12 bars**.
