Thin, crispy-edged beef patties smashed hard on a hot skillet, topped with melty cheese and piled into toasted buns.
Step 1: Preheat the pan
Heat a large cast iron skillet or heavy stainless pan over medium-high for 3–4 minutes until very hot (a drop of water should sizzle and dance). Add the oil and swirl to coat.
Step 2: Form the beef balls
Divide beef into 4 equal portions (about 4 oz each) and gently roll into loose balls (don’t pack them tight—loose = better browning and tenderness). Season the outside of each ball with a pinch of salt and pepper.
Step 3: Smash hard for crispy edges
Working in batches if needed, place 2 beef balls in the hot pan. Immediately press each one down firmly with a sturdy spatula until about 1/4-inch thick. Hold the pressure for 10 seconds to maximize browning. Cook undisturbed until the edges look deeply browned and lacy, 1 1/2 to 2 minutes.
Step 4: Flip and add cheese
Scrape under each patty (important—those browned bits are flavor) and flip. Immediately top with cheese. Cook 45–75 seconds, just until the cheese melts and the patty is cooked through.
Step 5: Toast the buns
Split buns and toast cut-sides down in the same pan for 30–60 seconds until golden. (If the pan is dry, add a tiny slick of oil.)
Step 6: Assemble and serve
Place a cheesy patty on each toasted bun. Serve hot while the edges are crisp.
