Creamy, vanilla-scented chia pudding topped with juicy berries and a glossy honey drizzle—an easy make-ahead dessert that tastes far more luxurious than the effort suggests.
Step 1: Mix the base
In a medium bowl (or a jar with a lid), whisk together the milk, yogurt, vanilla, salt, and 2 tbsp honey until smooth.
Step 2: Add chia + whisk properly
Sprinkle in the chia seeds while whisking (prevents clumps). Whisk for 30 seconds, then let sit 5 minutes and whisk again for 15–20 seconds.
Step 3: Chill to set
Cover and refrigerate for at least 4 hours (overnight is ideal) until thick, creamy, and spoonable.
Step 4: Make quick honey-berry topping (optional but excellent)
In a small saucepan, add 1 cup berries, lemon juice, and 1–2 tbsp water if using frozen berries. Cook over medium heat 3–5 minutes, stirring, until the berries burst and turn jammy. Remove from heat and stir in 1 tbsp honey. Cool to room temp.
Step 5: Assemble
Spoon chia pudding into 4 glasses or bowls. Top with remaining 1 cup fresh berries and a spoonful of the berry compote (or just all fresh berries). Finish with a light drizzle of honey.
