Step 2: Butterfly & season chicken
Halve chicken breasts horizontally to make thin cutlets (even thickness = even cooking). Season both sides with salt and pepper.
Step 3: Crumb the cutlets (flour → egg → panko)
Set up three bowls: flour, beaten egg + water, panko. Coat chicken in flour (tap off excess), dip in egg, then press firmly into panko so it really adheres—this is what gives that thick, shattery crust.
