Tender chicken and golden mushrooms wrapped in delicate crêpes, finished with a silky Dijon cream sauce for a cozy, bistro-style dinner at home.
Step 1: Make the crêpe batter
In a bowl, whisk flour and salt. Add eggs and whisk into a thick paste. Gradually whisk in milk until smooth, then whisk in melted butter. The batter should be the consistency of pouring cream; add up to 1 tbsp water if needed. Rest 10 minutes (this helps prevent tearing).
Step 2: Cook the crêpes
Heat a nonstick skillet (about 10 in/25 cm) over medium heat. Lightly butter the pan. Pour in about 1/4 cup batter, swirling to coat thinly. Cook 45–60 seconds until the edges lift and the underside is lightly golden, then flip and cook 20–30 seconds. Stack on a plate. (You need 8 crêpes; extra are a cook’s treat.)
Step 3: Brown the mushrooms
Heat 1 tbsp olive oil + 1 tbsp butter in a large skillet over high heat. Add mushrooms and spread out. Cook undisturbed 2 minutes, then stir and continue cooking until they release moisture and turn golden, 5–7 minutes total. Season with a pinch of salt and pepper, then scrape into a bowl.
Step 4: Cook the chicken and build flavor
In the same skillet, add remaining 1 tbsp olive oil + 1 tbsp butter. Add onion and cook 3 minutes until softened. Add garlic, thyme, and paprika; stir until fragrant, 30 seconds. Add chicken, season with salt and pepper, and sauté 4–6 minutes until just cooked through and lightly browned. Return mushrooms to the pan and toss together. Remove from heat.
Step 5: Make the creamy Dijon sauce
Sprinkle 1 tbsp flour over the chicken-mushroom mixture and stir for 1 minute (this cooks out the raw flour taste). Pour in stock while stirring, scraping up any browned bits. Simmer 2–3 minutes until slightly thickened. Stir in cream and Dijon mustard, then simmer gently 2–3 minutes until silky and coats a spoon. Stir in Parmesan (if using) and lemon juice (if using). Taste and adjust salt/pepper.
Step 6: Fill and fold the crêpes
Spoon a generous line of filling down the center of each crêpe. Roll up like a cigar or fold into triangles. Place seam-side down on plates (or into a warm ovenproof dish).
Step 7: Serve
Spoon extra sauce over the top. If you want a more “baked crêpes” feel, place filled crêpes in a dish, drizzle with sauce, and warm in a 350°F/175°C oven for 8–10 minutes.
