A lighter, veggie-forward take on gumbo with lean chicken, fiber-rich okra, and hearty brown rice in a deeply savory, non-spicy broth.
Step 1: Season & sear the chicken
Pat chicken dry, then toss with 1/2 tsp salt and the black pepper. Heat olive oil in a large pot over medium-high heat. Add chicken in a single layer and sear until lightly golden on 2 sides (it won’t be fully cooked), about 3–4 minutes total. Transfer to a plate.
Step 2: Build the flavor base (no roux needed)
Reduce heat to medium. Add onion, bell pepper, and celery to the same pot with a pinch of salt. Cook, stirring, until softened and sweet-smelling, about 8 minutes. Add garlic and cook until fragrant, 30 seconds.
Step 3: Toast the tomato paste & spices
Stir in tomato paste, smoked paprika, thyme, and oregano. Cook, stirring constantly, until the paste darkens slightly and smells toasty, about 1–2 minutes (this mimics some of the depth you’d get from a roux—without the heaviness).
Step 4: Simmer the gumbo
Pour in chicken broth, scraping the bottom of the pot to dissolve any browned bits. Add bay leaves, Worcestershire (if using), diced tomatoes (if using), and return chicken (plus any juices) to the pot. Bring to a gentle simmer.
Step 5: Add okra & thicken naturally
Stir in okra. Simmer gently, uncovered, stirring occasionally, until the chicken is tender and the broth has thickened slightly from the okra, about 20–25 minutes. If it gets thicker than you like, add a splash of water or broth to loosen.
Step 6: Finish & serve
Taste and adjust salt and pepper. Remove bay leaves. Serve ladled over warm brown rice. Top with scallions if using, and add a squeeze of lemon right before eating for a fresh lift.
