Tender, lemon-kissed chicken ricotta meatballs simmered in a light garlicky pan sauce, served over silky spinach-studded orzo with plenty of Parmesan.
Step 1: Mix the meatballs
In a bowl, combine ground chicken, ricotta, Parmesan, egg, lemon zest, minced garlic, oregano, salt, and pepper. Mix gently with a fork or your hands just until combined (overmixing makes meatballs tough).
Step 2: Shape
Roll into 14–16 meatballs (about 2 tbsp each). Lightly oil your hands if the mixture sticks.
Step 3: Brown the meatballs
Heat 2 tbsp olive oil in a large nonstick or cast-iron skillet over medium-high heat. Add meatballs and cook, turning carefully, until well-browned all over, about 6–8 minutes total. They don’t need to be cooked through yet—just nicely golden.
Step 4: Make a quick pan sauce (and finish cooking)
Reduce heat to medium. Add the 3 minced garlic cloves and chili flakes (if using). Stir until fragrant, 30 seconds. Add chicken broth and scrape up the browned bits from the pan. Simmer gently for 5–7 minutes, turning meatballs once or twice, until cooked through (internal temp 165°F / 74°C) and the broth reduces into a light sauce.
Step 5: Cook the orzo
While meatballs simmer, cook orzo in salted boiling water until just al dente (check 1 minute before package time). Reserve 1/2 cup pasta water, then drain.
Step 6: Wilt spinach & gloss the orzo
In the pot (or a separate pan), warm 2 tbsp olive oil over medium heat. Add drained orzo, then add spinach in handfuls, tossing until wilted, about 1–2 minutes. Add a splash of reserved pasta water as needed to make it glossy and loose. Season with salt and pepper.
Step 7: Finish & serve
Stir lemon juice into the meatball pan sauce (optional but brightens everything). Spoon spinach orzo into bowls, top with meatballs, and drizzle over the garlicky pan sauce. Finish with extra Parmesan and black pepper.
