Fluffy, fragrant basmati rice layered with golden-crisp cauliflower, warming cardamom, and saffron for a biryani-style centerpiece that’s deeply aromatic and gloriously textured.
Step 1: Bloom the saffron
Crush the saffron threads between your fingers into a small bowl, add 3 tbsp hot water, and set aside. The water should turn deep golden-orange as it steeps.
Step 2: Parboil the rice (the biryani way)
Rinse basmati rice in several changes of water until the water runs mostly clear. Bring a large pot of water to a rolling boil and salt it generously (it should taste pleasantly salty). Add rice, boil **6 minutes** until the grains are **about 70% cooked** (they should still have a firm core). Drain immediately and spread on a tray to stop carryover cooking.
Step 3: Crisp up the cauliflower
Heat oven to **220°C / 425°F**. Toss cauliflower florets with **2 tbsp oil**, **1/2 tsp salt**, **1/2 tsp paprika**, and **1/4 tsp turmeric**. Spread on a tray (don’t overcrowd). Roast **20–25 minutes**, flipping once, until **deeply golden with crisp edges**. This is key for texture.
Step 4: Make the spiced onion base
In a large, deep pan (with a lid), heat **2 tbsp oil** plus **2 tbsp ghee/butter** over medium-high heat. Add sliced onion and cook **10–12 minutes**, stirring often, until **deep golden brown** (not pale—this is where biryani flavor comes from). If it starts catching, splash in a tablespoon of water and keep going.
Step 5: Bloom aromatics & spices
Reduce heat to medium. Add cardamom, cinnamon, cloves, bay leaf, and cumin seeds; stir until **fragrant, 30–45 seconds**. Add garlic and ginger; cook **1 minute** until the raw smell disappears. Stir in ground coriander, remaining paprika, and remaining turmeric (and cayenne if using) for **20 seconds**.
Step 6: Season with yogurt (creates clingy masala)
Turn heat to low. Stir in yogurt and lemon juice, scraping the pan, until you have a thick, spoon-coating masala. Taste and adjust salt if needed (remember the rice is lightly salted from boiling).
Step 7: Layer the biryani
Scatter half the rice over the masala. Top with all the roasted cauliflower. Sprinkle cilantro/mint (if using). Add remaining rice. Drizzle the saffron water evenly over the top (including the threads).
Step 8: Dum (steam) to finish
Cover tightly with a lid (or place foil under the lid for a better seal). Cook on **low heat 18 minutes**. Turn off heat and rest **10 minutes** without opening—this finishes steaming and keeps the rice fluffy.
Step 9: Serve
Gently fluff by lifting from the bottom to bring up the masala and cauliflower without smashing the rice. Serve hot, with extra lemon wedges if you like (pantry staple).
