Chewy, no-bake snack bars packed with toasted almonds, cocoa-rich dark chocolate, and a pinch of salt for that addictive sweet-salty bite.
Step 1: Prep the pan
Line an 8-inch (20cm) square pan with baking paper, leaving overhang so you can lift the bars out later.
Step 2: Toast the almonds (big flavor, tiny effort)
Add almonds to a dry skillet over medium heat. Toast, stirring often, until they smell nutty and you see a few golden spots, about 4–6 minutes. Tip onto a board to cool slightly, then roughly chop (some small bits help the bars hold together).
Step 3: Make the chocolatey binder
In a medium saucepan over low heat, warm the peanut/almond butter and honey/maple syrup until loosened and glossy, about 1–2 minutes. Remove from heat. Stir in cocoa powder, vanilla, and salt until smooth and thick like brownie batter.
Step 4: Combine
Add chopped almonds and oats to the saucepan. Mix firmly with a spatula until every oat is coated and the mixture clumps together. If it seems dry, warm it on low for 20–30 seconds and mix again (it should be sticky and packable).
Step 5: Press into the pan
Scrape mixture into the lined pan. Press very firmly into an even layer (this is key for bars that don’t crumble). Use the bottom of a measuring cup or glass to really compact the surface.
Step 6: Melt and spread the dark chocolate
Melt dark chocolate with coconut oil (if using) in the microwave in 20-second bursts, stirring between, or over a double boiler. Spread a thin, even layer over the bars.
Step 7: Chill, slice, snack
Refrigerate until firm, about 60 minutes. Lift out using paper overhang. Slice into 10 bars (or 16 small bites). Let sit 5 minutes at room temp before eating for the best chewy texture.
