A fast, weeknight-friendly stir-fry with tender sliced beef, crisp seasonal vegetables, and light noodles coated in a glossy savory sauce.
Step 1: Soften the noodles
Cook noodles according to packet directions until just tender (don’t overcook). Drain, rinse briefly under cool water to stop cooking, then toss with a tiny drizzle of oil to prevent sticking.
Step 2: Mix the sauce
In a small bowl, whisk soy sauce, oyster sauce, vinegar, honey, sesame oil (if using), water, and cornstarch until smooth. Set near the stove (it thickens fast once heated).
Step 3: Prep beef for tenderness
Pat beef dry (helps it brown). Season lightly with pepper and a pinch of salt (go easy—soy is salty). Keep slices loose so they sear rather than steam.
Step 4: Sear the beef
