Crunchy, golden spring rolls packed with fresh vegetables and a savory, garlicky filling—perfect as a snack, starter, or light meal.
Step 1: Make the filling
Heat 1 tbsp neutral oil in a large skillet over medium-high heat. Add garlic and stir until fragrant, about 15–20 seconds (don’t let it brown). Add cabbage and carrot and stir-fry for 2 minutes until slightly softened but still crisp. Add bean sprouts and spring onions, stir for 30 seconds.
Step 2: Season & dry it out
Add soy sauce, sugar, pepper, and sesame oil. Keep stir-frying another 1–2 minutes until the vegetables are crisp-tender and any liquid in the pan has mostly evaporated. Tip the filling onto a plate and spread it out so it cools quickly (important—hot filling makes wrappers soggy).
Step 3: Roll the spring rolls
Mix cornstarch with water to make a glue. Place a wrapper in a diamond shape. Add about 2 heaped tablespoons of filling near the bottom third. Fold the bottom corner up over the filling, fold in the sides snugly, then roll tightly. Brush the top corner with cornstarch slurry and seal. Repeat.
Step 4: Fry until golden and crisp
Heat 2–3 cm (1 inch) oil in a small pot or deep skillet to **180°C / 350°F**. Fry 3–4 at a time for **3–4 minutes**, turning occasionally, until deep golden and crisp. Drain on a rack (best) or paper towel.
Step 5: Serve
Rest 2 minutes (they finish crisping as steam escapes), then serve hot.
