An indulgent steakhouse-style dinner for two: pepper-crusted filet mignon with a glossy cognac-style cream pan sauce, served with velvety parmesan mash and elegant asparagus.
Step 1: Prep the steaks
Pat steaks very dry with paper towels (dry surface = better crust). Season all over with 1 tsp salt. Press crushed pepper firmly onto both sides and edges. Set aside at room temp while you start the potatoes.
Step 2: Boil potatoes
Put potatoes in a pot, cover with cold water by 2–3 cm, add 1/2 tsp salt. Bring to a boil, then simmer 12–15 minutes until a knife slides in easily with no resistance. Drain well, then return to the hot pot for 1 minute, shaking gently, to steam off excess water (this is the secret to fluffy mash).
Step 3: Make the mash silky
Warm milk and butter together (microwave 30–45 seconds or on low heat) until butter melts. Mash potatoes until smooth (a potato ricer gives restaurant texture). Stir in warm milk-butter, then Parmesan. Season with pepper and a pinch more salt if needed. Cover with a lid to keep warm.
Step 4: Sear the steaks
Heat a heavy skillet (cast iron ideal) over high heat until very hot (a faint wisp of smoke). Add oil. Lay steaks in and sear 2–3 minutes until deeply browned. Flip and sear 2 minutes. Add 1 tbsp butter and tilt the pan; baste steaks continuously 30–60 seconds until glossy and aromatic.
Step 5: Finish to perfect doneness
Reduce heat to medium. Cook to temperature, flipping once more if needed:
Step 6: Start the pan sauce (same pan)
Pour off excess fat, leaving about 1 tbsp in the pan. Add shallot with a pinch of salt; sauté 1 minute until softened. Add garlic; stir 20–30 seconds until fragrant.
Step 7: Deglaze and reduce
Carefully add cognac (stand back). Simmer 30–60 seconds, scraping up browned bits (that’s flavour). Add beef stock and simmer 4–6 minutes until reduced by about half and slightly syrupy.
Step 8: Make it glossy and rich
Lower heat to medium-low. Stir in cream, Dijon, and Worcestershire. Simmer 2–3 minutes until it coats the back of a spoon. Taste and balance with a tiny squeeze of lemon if needed. Turn off heat and whisk in the remaining 1 tbsp butter for a silky finish.
Step 9: Cook asparagus
In a second pan, heat olive oil and butter over medium-high. Add asparagus, season with salt and pepper, and sauté 4–6 minutes, turning, until bright green and tender-crisp with a few golden blisters. Finish with lemon zest or a squeeze of lemon.
Step 10: Plate like a restaurant
Spoon mash into a swoosh on each plate. Slice steaks thickly (or serve whole), lean on the mash, and spoon sauce over the top. Arrange asparagus alongside. Crack a little fresh pepper over the sauce for drama.
