A spicy-sweet “firecracker” chicken skillet finished with a surprisingly creamy, high-protein cottage cheese–Parmesan sauce that clings to every bite.
Step 1: Season & coat the chicken
Pat chicken dry (this helps it brown). Toss with salt, pepper, paprika, and cornstarch until every piece looks lightly dusted and a bit “pastey” from the moisture—this is perfect for a crisp coating.
Step 2: Sear until golden
Heat 1 1/2 tbsp oil in a large skillet over medium-high heat. Add chicken in a single layer (cook in 2 batches if needed). Sear 2–3 minutes per side until deeply golden and just cooked through (165°F/74°C). Transfer to a plate.
Step 3: Make the firecracker glaze
Lower heat to medium. Add remaining 1/2 tbsp oil, then garlic and cook until fragrant, about 20–30 seconds (don’t let it brown). Stir in hot sauce, honey, soy sauce, vinegar, and red pepper flakes. Simmer 1–2 minutes until slightly thickened and glossy.
Step 4: Blend the cottage cheese–Parmesan sauce
In a blender (or using a stick blender in a tall jug), blend cottage cheese and Parmesan until smooth and pourable. Add 1–2 tbsp water as needed to get a thick cream consistency (it should coat a spoon but still flow).
Step 5: Bring it together (don’t boil the cheese sauce)
Return chicken (and any juices) to the skillet and toss in the firecracker glaze until sticky and evenly coated, 30–60 seconds. Turn heat to low. Pour in the cottage cheese–Parmesan sauce and gently toss just until warmed through, 1–2 minutes. **Do not boil** (high heat can make the sauce grainy).
Step 6: Finish & serve
Taste and adjust: more hot sauce for heat, a pinch of salt for punch, or a drizzle of honey for sweetness. Top with green onions if using. Serve hot.
