Juicy chicken and crisp-tender veg in a glossy, savory sauce that tastes like your favorite takeout—only fresher and faster.
Step 1: Make the glossy stir-fry sauce
In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, honey, cornstarch, and water until completely smooth (no lumps). Set aside—this is what will thicken and coat everything at the end.
Step 2: Prep for speed (key stir-fry rule)
Have chicken, vegetables, and sauce ready by the stove. Stir-fries move fast; once the pan is hot, you don’t want to be chopping.
Step 3: Sear the chicken
Heat 1 tbsp oil in a large skillet or wok over high heat until shimmering. Add chicken in a single layer (cook in 2 batches if needed). Sear 2 minutes undisturbed until lightly golden, then stir-fry 1–2 minutes more until just cooked through. Transfer to a bowl.
Step 4: Stir-fry the veg
Add remaining 1 tbsp oil. Add onion, carrot, and broccoli. Stir-fry 2–3 minutes until bright and starting to soften (broccoli should go vivid green). Add capsicum and cook 1 minute.
Step 5: Bloom the aromatics
Add garlic and ginger. Stir constantly for 30–45 seconds until fragrant (don’t let garlic brown—turn heat down slightly if needed).
Step 6: Sauce + toss to finish
Give the sauce a quick re-whisk (cornstarch settles). Pour into the pan and toss for 30–60 seconds until it turns glossy and thick enough to cling to the chicken and veg. Return chicken (and any juices) to the pan and toss 30 seconds to warm through. Taste and adjust with a pinch of salt or a crack of pepper if needed.
