An ultra-comforting, warmly spiced pumpkin curry with creamy-soft sweet potato, hearty beans, and spinach folded in at the end for a fresh finish.
Step 1: Bloom the spices
Heat oil in a medium pot over medium heat. Add garlic and cook until fragrant, about 30 seconds. Add curry powder, cumin, paprika, and chili flakes. Stir constantly for 30–45 seconds until the spices smell toasted (this builds deep curry flavor).
Step 2: Coat the vegetables
Add pumpkin and sweet potato. Stir well for 1 minute so every piece is glossy and coated in spices.
Step 3: Simmer until tender
Pour in the water (or stock), add salt and a few grinds of black pepper, and bring to a lively simmer. Reduce heat to medium-low, cover, and cook for 12–15 minutes, stirring once or twice, until the sweet potato is tender and the pumpkin is starting to soften.
Step 4: Thicken the curry
Uncover. Using the back of a spoon, mash some pumpkin pieces against the side of the pot to naturally thicken the sauce (mash more for thicker curry). Simmer uncovered for 3–5 minutes until the sauce looks glossy and lightly thickened.
Step 5: Add beans + finish with spinach
Stir in kidney beans and simmer 2 minutes to warm through. Add spinach and stir just until wilted, about 30–60 seconds. Taste and adjust salt, pepper, and chili.
Step 6: Serve
Ladle into bowls and serve hot. It’s hearty as-is, or great over rice if you have it as a pantry staple.
