Step 1: Preheat & prep pan
Preheat oven to **425°F / 220°C**. Line a sheet pan with foil or parchment (optional, for easier cleanup).
Step 2: Season the sprouts
Add halved Brussels sprouts to the sheet pan. Drizzle with **olive oil**, sprinkle with **salt** and **pepper**, then toss well. Arrange **cut-side down** for maximum browning.
Step 3: Roast (first stage)
Roast for **12 minutes**, until the cut sides are starting to turn golden.
Step 4: Add turkey bacon
Scatter the **turkey bacon pieces** over the pan and toss everything together lightly (keep as many sprouts cut-side down as you can). Roast for **10–12 minutes** more, until sprouts are **deeply caramelized** and bacon is **browned and crisp at the edges**.
Step 5: Make the glaze
While the pan finishes, whisk together **maple syrup, Dijon mustard, balsamic vinegar, honey**, and **red pepper flakes** (if using) in a small bowl until smooth.
Step 6: Glaze & finish
Remove the pan from the oven. Immediately drizzle glaze over the hot sprouts and bacon, then toss to coat. Return to the oven for **2–3 minutes**, just until the glaze looks **bubbly and tacky** (watch closely—sugars can burn fast).
Step 7: Serve
Let cool **2 minutes** (the glaze thickens as it stands), then serve warm. Scrape up any sticky bits from the pan and spoon them over the top.
