A fiery, herb-forward Thai curry with a light broth and bold aromatics—no coconut milk, just pure punchy flavor.
Step 1: Bloom the curry paste
Heat oil in a pot over medium heat. Add the jungle curry paste and stir-fry until fragrant and the oil starts to separate slightly, about 2 minutes. (This step deepens the flavor—don’t rush it.)
Step 2: Cook the chicken
Add chicken and toss to coat in the paste. Cook until the outside turns opaque, about 2–3 minutes.
Step 3: Build the broth
Pour in the water, scraping the bottom of the pot to dissolve any stuck curry paste. Bring to a lively simmer.
Step 4: Season the curry
Stir in fish sauce, sugar, and tamarind (if using). Simmer 5 minutes so the chicken cooks through and the broth takes on the curry’s bite.
Step 5: Add vegetables in stages
Add eggplant and simmer until starting to soften, about 4 minutes. Add green beans and bamboo shoots; simmer until beans are bright green and tender-crisp, 3–4 minutes.
Step 6: Finish with herbs
Turn off heat. Stir in basil and sliced chili (if using). Taste and adjust: more fish sauce for salt, sugar to round heat, tamarind for tang.
