Step 1: Mix the sauce
In a small bowl, whisk together soy sauce, oyster sauce, vinegar, brown sugar, sesame oil, water, 1 tsp cornstarch, pepper, and chili flakes (if using). Set aside (re-whisk right before pouring—cornstarch settles).
Step 2: Velvet the chicken (the “better than store” trick)
Toss chicken with 1/4 cup cornstarch, 1/2 tsp salt, and 1 tbsp oil until every piece is lightly coated and looks a bit pasty. This creates that tender, silky stir-fry texture.
Step 3: Toast the almonds
Heat a large skillet or wok over medium heat. Add almonds and toast, stirring often, until fragrant and lightly golden, 3–4 minutes. Tip into a bowl.

Add garlic, ginger, and scallions. Stir constantly until fragrant, about 30 seconds (don’t let garlic burn). Re-whisk sauce, pour it in, and simmer 45–60 seconds until glossy and thick enough to coat a spoon.
Step 7: Finish and serve
Return chicken and almonds to the pan. Toss for 30–60 seconds until everything is well coated and warmed through. Serve immediately (great over steamed rice if you have it).
