Step 1: Cook the rice
Rinse rice until the water runs mostly clear (helps it stay fluffy). Add rice, water, and 1 tsp salt to a pot. Bring to a boil over high heat, then cover and reduce to low for 12 minutes. Turn off heat and rest, covered, 10 minutes. Fluff with a fork.
Step 2: Prep the chicken
Pat chicken dry (this is key for browning). Season both sides with 1/2 tsp salt and pepper. Lightly dredge in flour, shaking off excess (this helps create a golden crust and lightly thickens the sauce).
Step 3: Sear until golden
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook 4–5 minutes per side, until deep golden and the internal temp reaches 165°F/74°C. Transfer to a plate.
Step 4: Sauté the vegetables
In the same skillet, add 1 tbsp olive oil if the pan looks dry. Add broccoli, bell pepper, and zucchini. Season with a pinch of salt and pepper. Cook 4–6 minutes, stirring, until crisp-tender and lightly browned in spots. Add garlic and cook 30 seconds until fragrant. Transfer vegetables to a bowl (or push to the edges of the pan if your skillet is large).
Step 5: Make the lemon-caper sauce
Lower heat to medium. Add butter to the skillet. Once melted, add chicken broth, lemon juice, lemon zest, capers, and Dijon (if using). Simmer 2–3 minutes, scraping up the browned bits from the pan, until slightly reduced and glossy.
Step 6: Finish and serve
Return chicken (and any resting juices) to the skillet. Spoon sauce over and simmer 1–2 minutes to warm through. Add vegetables back in (if removed) just to reheat. Serve chicken and vegetables over rice, spooning extra sauce on top. Finish with parsley and lemon wedges if you like.
