This tender, gently baked pear tea cake is naturally sweet, high-protein, and soft-textured—designed to feel satisfying without being heavy, making it a GLP-1-friendly Sunday treat.
Step 1: Prep pan & oven
Heat oven to **175°C / 350°F**. Line a small loaf pan (**~20 x 10 cm / 8 x 4 in**) with parchment (or lightly oil it).
Step 2: Mix the wet ingredients
In a bowl, whisk **Greek yogurt, eggs, honey, ginger, vanilla (if using), and salt** until smooth and glossy.
Step 3: Add dry ingredients
Whisk in **almond flour** and **baking powder** until just combined (batter will be thick but spoonable).
Step 4: Fold in pear
Fold in the **grated pear**. Rest the batter **2 minutes** so the almond flour hydrates (this helps create a softer, more tender crumb).
Step 5: Bake gently
Scrape into the pan and smooth the top. Bake **32–38 minutes**, or until the center is set and a skewer comes out **mostly clean** (a few moist crumbs are perfect). If the top browns too fast, loosely cover with foil for the last 10 minutes.
Step 6: Cool for best texture
Cool in the pan **10 minutes**, then lift out and cool **another 10 minutes** before slicing. (Warm is lovely, but slightly cooled slices are gentler and less “sticky” for many GLP-1 users.)
