All the cozy, hearty vibes of a stew—without being one—this one-pan beef-and-rice dinner is fast, wholesome, and kid-friendly.
Step 1: Brown the beef (build flavour)
Heat 1 tbsp oil in a large deep skillet (with lid) over high heat. Add beef, season with 1 tsp salt and plenty of pepper, and cook until deeply browned with crispy bits, 6–8 minutes. If there’s lots of fat, spoon off a little (leave ~1 tbsp for flavour).
Step 2: Sauté the veg + spices
Add onion and carrot (and bell pepper if using) with the remaining 1 tbsp oil. Cook 4–5 minutes until the onion is soft and the carrot is starting to sweeten. Add garlic, cumin, paprika, and oregano; cook until fragrant, 30 seconds.
Step 3: Toast rice (prevents mushy texture)
Stir in the uncooked rice and tomato paste. Cook, stirring, 1 minute so the rice gets coated and slightly “toasty”.
Step 4: Simmer (not a stew, but still juicy)
Pour in water and stir well, scraping up any browned bits from the bottom. Bring to a simmer, then cover and reduce heat to low. Cook 12 minutes (no peeking if you can help it).
Step 5: Finish with peas/corn + rest
Scatter peas/corn over the top, cover again, and cook 3 more minutes until the rice is tender and the veg is hot. Turn off heat and rest 5 minutes (this finishes the rice and keeps it fluffy).
Step 6: Fluff + serve
Fluff with a fork. Taste and adjust salt/pepper. Serve straight from the skillet.
