Juicy, golden-seared chicken finished in a buttery lemon-garlic pan sauce with tender-crisp asparagus—an Italian-style dinner that tastes restaurant-worthy with minimal cleanup.
Step 1: Prep the chicken & asparagus
Pat chicken dry (this helps browning). Season both sides with salt, pepper, and Italian seasoning. Toss asparagus with 1 tbsp olive oil and a pinch of salt; set aside.
Step 2: Lightly dredge for a glossy pan sauce
Sprinkle flour onto a plate. Lightly coat each chicken breast, shaking off excess (you want a thin veil, not a crust).
Step 3: Sear the chicken until golden
Heat a large skillet (12-inch is ideal) over medium-high heat. Add 2 tbsp olive oil. When shimmering, add chicken and sear 4–5 minutes per side until deeply golden and just cooked through (internal temp 165°F/74°C). Transfer to a plate.
Step 4: Sauté garlic (don’t burn it)
Reduce heat to medium. Add butter. Once melted and foamy, add garlic and red pepper flakes. Stir until fragrant, about 30–45 seconds.
Step 5: Build the lemon pan sauce
Pour in chicken stock, scraping up the browned bits with a wooden spoon. Simmer 2 minutes to reduce slightly. Add lemon zest and lemon juice; simmer 1 minute more. Taste and adjust with salt/pepper—this sauce should be bright and savory.
Step 6: Cook the asparagus in the sauce
Add asparagus to the pan and toss to coat. Cover (or loosely tent with foil) and cook 3–5 minutes, tossing once, until tender-crisp and bright green. If the sauce reduces too much, splash in 1–2 tbsp water/stock.
Step 7: Finish & serve
Return chicken (and any juices) to the pan. Spoon sauce over the chicken and warm through 1–2 minutes. Sprinkle with parsley. Serve straight from the skillet with extra lemon wedges if you like.
