A high-protein, high-fiber morning bowl of fluffy quinoa soaked in almond milk and topped with juicy mixed berries for a naturally sweet, antioxidant-rich start to the day.
Step 1: Rinse the quinoa
Place quinoa in a fine-mesh sieve and rinse under cold running water for 20–30 seconds, rubbing it lightly with your fingers. This removes natural bitterness (saponins) and makes the final bowl taste cleaner and sweeter.
Step 2: Cook until fluffy
Add quinoa and water to a small saucepan with the salt. Bring to a boil over high heat, then reduce to low, cover, and simmer for **12 minutes**. Turn off the heat and rest **5 minutes** (still covered), then fluff with a fork. You’re looking for separated grains and little “tails” spiraled out.
Step 3: Make it creamy
Return the pan to low heat. Stir in **1 1/2 cups almond milk**, cinnamon, and vanilla (if using). Cook **2–3 minutes**, stirring, until it looks like a loose porridge. If it thickens too much, splash in extra almond milk until creamy.
Step 4: Warm the berries (optional but great with frozen)
Add half the berries to the pot and stir for **30–60 seconds** just to lightly warm and streak the bowl with berry juices. Keep the rest for topping so you get fresh pops of flavor and texture.
Step 5: Serve
Divide into 2 bowls. Top with the remaining berries. Add an extra splash of almond milk if you like it looser and more “cereal-like.” Eat warm.
