Crunchy, salty, smoky little nuggets that hit like chips—but with protein and fiber, ready in under 30 minutes.
Step 1: Heat oven & prep tray
Preheat oven to **220°C / 425°F** (200°C fan). Line a baking tray with parchment for easy cleanup (optional, but helps prevent sticking).
Step 2: Dry the chickpeas (this is the crunch secret)
Spread rinsed chickpeas on a clean kitchen towel (or paper towels). Pat very dry, rolling them around to remove moisture. If some skins slip off, discard them—less steaming, more crunch.
Step 3: Season
Tip chickpeas onto the tray. Drizzle with **olive oil**, then sprinkle over **smoked paprika, cumin (if using), garlic powder, salt, pepper, and cayenne (if using)**. Toss well, then spread into a single layer (crowding = soft chickpeas).
Step 4: Roast until crisp
Roast **20–25 minutes**, shaking the tray at the **10-minute** mark. They’re done when **deep golden in spots**, feel **dry to the touch**, and sound **lightly “rattly”** when you shake the tray. (They crisp more as they cool.)
Step 5: Cool & snack
Let cool on the tray **5–10 minutes** to finish crisping. Taste and add a pinch more salt if needed. Serve warm or at room temp.
