A fast, deeply savory, gingery beef stir-fry with caramel-kissed cabbage and mushrooms, finished with sesame and a vinegar pop.
Step 1: Prep the stir-fry
Shred cabbage finely (thin ribbons cook fast and go glossy). Slice onion, slice mushrooms, mince garlic, and grate ginger.
Step 2: Brown the beef
Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef, season lightly with salt and pepper, and cook until nicely browned, breaking it up as you go, 5–7 minutes. Transfer beef to a bowl (leave any drippings in the pan for flavor).
Step 3: Sauté aromatics + mushrooms
In the same pan over medium-high, add onion and mushrooms. Stir-fry until the onion softens and mushrooms start to brown, 2–3 minutes. Add garlic and ginger and stir until very fragrant, about 30 seconds.
Step 4: Caramelize the cabbage
Turn heat up to high. Add cabbage and stir-fry 5–7 minutes until it’s wilted but still has a little bite, with some golden edges. If the pan looks dry, add a small splash of water to help it steam for 30 seconds, then let it fry again.
Step 5: Sauce and finish
Return beef (and any juices) to the pan. Add soy sauce, sesame oil, rice vinegar, and red pepper flakes. Toss vigorously for 1–2 minutes until everything is coated, glossy, and hot. Taste and adjust with a pinch of salt/pepper if needed.
Step 6: Serve
Remove from heat and top with green onions. Serve hot.
