Creamy, savory oats swirled with wilted spinach and salty feta, topped with a crisp-edged fried egg for a breakfast that eats like comfort food.
Step 1: Cook the oats
In a medium saucepan, bring the water (and milk, if using) to a simmer over medium heat. Stir in the oats and **1/2 tsp salt**. Reduce heat to medium-low and cook, stirring often, until thick and creamy, **6–8 minutes**.
Step 2: Wilt the spinach
Stir in the spinach (and garlic, if using). Cook **1–2 minutes**, stirring, until the spinach is fully wilted and the oats loosen slightly. Add a splash of water if it gets too thick.
Step 3: Season and add feta
Turn heat off. Stir in **most of the feta** (reserve a little for topping), black pepper, and chili flakes if using. Taste and adjust with the remaining **1/4 tsp salt** if needed. Stir in lemon juice (if using) for a fresher, less “heavy” finish.
Step 4: Fry the eggs (crispy-edged)
Heat olive oil (or butter) in a nonstick or well-seasoned skillet over **medium-high** heat. Crack in the eggs. Cook **2–3 minutes** until the whites are set and the edges are deeply golden and crisp; for a set yolk, cover the pan for **30–60 seconds**.
Step 5: Assemble
Divide the savory oats between bowls. Top each with a fried egg. Sprinkle with the reserved feta and extra black pepper (and a pinch more chili flakes if you like). Serve immediately while the egg is hot and the oats are creamy.
