Step 1: Layer the slow cooker
Add onion and bell pepper to the base of a small slow cooker (or one side of a larger one). Nestle chicken breasts on top. Sprinkle over salt, pepper, oregano, and thyme.
Step 2: Add the braising liquid
Pour in crushed tomatoes and chicken broth. Scatter over the minced garlic. Drizzle in the olive oil (this small amount helps carry flavor without making it greasy).
Step 3: Slow-cook until very tender
