A deeply aromatic, slow-cooked Moroccan-style stew with tender lamb, sweet pumpkin, and chickpeas in a warmly spiced sauce—served over quick, fluffy couscous.
Step 1: Brown the lamb (best flavor)
Heat 1 tbsp olive oil in a large skillet over high heat. Season lamb with salt and pepper. Sear in batches (don’t crowd the pan) until deeply browned on all sides, about 5–7 minutes per batch. Transfer to the slow cooker.
Step 2: Bloom the spices
Reduce heat to medium. Add remaining 1 tbsp olive oil, then the onion and cook until softened and lightly golden, about 5 minutes. Add garlic and cook until fragrant, 30 seconds. Stir in tomato paste and cook 1 minute (it should darken slightly). Add cumin, coriander, paprika, cinnamon, ginger, cloves, and chili flakes; stir for 30 seconds to toast the spices.
Step 3: Deglaze and build the sauce
Pour in about 1/2 cup of the stock, scraping up the browned bits from the pan. Tip everything into the slow cooker. Add remaining stock, chickpeas, dried apricots (if using), and honey (if using). Stir well.

Put couscous, salt, and olive oil/butter in a heatproof bowl. Pour over boiling water/stock, stir once, cover tightly (plate or lid), and stand 5 minutes. Fluff with a fork until light and separated.
Step 8: Serve
Spoon couscous into bowls, ladle over lamb tagine, and finish with herbs and toasted almonds if using. Add lemon wedges on the side for squeezing.
