Fork-tender lamb shoulder slow-roasted with garlic, herbs, and vegetables, served with its own deeply savory pan juices.
Step 1: Prep the lamb
Pat the lamb shoulder dry. Use a small knife to make several small slits all over the meat and insert 3 garlic cloves (halved or sliced) into the slits.
Step 2: Rest the meat
Let the lamb sit at room temperature for 30 minutes.
Step 3: Season the lamb
Rub the lamb all over with the oil, salt, black pepper, cumin, and smoked paprika.
Step 4: Preheat the oven
Heat the oven to 160°C / 325°F.
Step 5: Sear the lamb
Heat a large pan over medium-high heat. Add the butter and sear the lamb for 3–4 minutes per side until well browned.
Step 6: Deglaze the pan
Pour a small splash of the broth into the hot pan and scrape up the browned bits. Pour the pan juices into a roasting dish.
Step 7: Assemble the roast
Add the quartered onion, carrot chunks, remaining 2 garlic cloves, and rosemary or thyme to the roasting dish. Set the lamb on top.
Step 8: Add the braising liquid
Stir the tomato paste into the remaining broth and the water, then pour around the lamb (not over the top, to keep the crust).
Step 9: Roast covered
Cover the dish tightly and roast for 2.5–3 hours, checking once during cooking and adding a little more water or broth if the pan looks dry. Cook until the lamb reaches about 90°C / 195°F internal temperature for pull-apart tenderness.
Step 10: Brown uncovered
Remove the cover and roast 20–30 minutes more, until the lamb is lightly golden.
Step 11: Reduce the juices
Transfer the lamb to a plate. Pour the pan juices (and softened vegetables, if desired) into a saucepan and simmer 5–8 minutes until slightly thickened.
Step 12: Rest the lamb
Rest the lamb, loosely covered, for 15 minutes.
Step 13: Finish and serve
Stir the lemon juice into the reduced juices. Slice or pull the lamb, spoon the garlic pan juices over, and finish with fresh mint or parsley.
