Step 1: Prep oven & pan

Step 2: Drain the veggies (key for soft, not soggy)
Put grated zucchini and potato in a bowl, sprinkle with **1/2 tsp salt**, toss, then let sit **5 minutes**. Grab big handfuls and **squeeze firmly** over the sink to remove as much liquid as possible (aim for the mixture to feel damp, not wet). Return to the bowl.
Step 3: Mix the batter
