Step 1: Whisk it smooth-ish
In a bowl, whisk the eggs, water, salt, and a few grinds of black pepper until no streaks remain (about 15 seconds). Add the cottage cheese and whisk briefly just to distribute (it won’t fully disappear—good!).
Step 2: Warm the pan gently
Place a small nonstick pan over **low heat**. Add the olive oil (or butter) and let it melt/warm until it looks loose and glossy, **not sizzling**.
Step 3: Slow-scramble
