Fast, juicy beef mince cooked until caramelised and tossed in a punchy soy-chilli sauce, spooned into crisp lettuce cups for a fresh, weeknight-friendly meal.
Step 1: Make the sauce
In a small bowl, mix soy sauce, honey, vinegar, chilli flakes, and sesame oil (if using). Set aside.
Step 2: Brown the beef properly
Heat oil in a large pan over high heat. Add beef mince and press it into the pan in an even layer. Leave it undisturbed for 2 minutes so it browns, then break it up and cook for 3–4 minutes until deeply browned with crispy edges (that’s flavour).
Step 3: Add aromatics
Add garlic and ginger. Stir for 30–60 seconds until fragrant (don’t let the garlic burn).
Step 4: Glaze and reduce
Pour in the sauce and toss. Cook for 1–2 minutes until it bubbles and coats the mince like a glossy glaze. Taste and season with pepper, and a pinch of salt only if needed (soy is salty).
Step 5: Serve
Spoon hot beef into lettuce leaves and eat like tacos. If you like, drizzle with a touch more sesame oil and extra chilli flakes.
