A retro steakhouse classic with a twist: the iconic Diane pan sauce made bolder and silkier with crushed peppercorns and a deeper, glossy finish.
Step 1: Season & warm the steaks
Pat steaks dry. Season both sides with salt and the **1/2 tsp ground pepper**. Let sit 5 minutes while you prep the sauce ingredients (this helps the surface dry for better browning).
Step 2: Sear hard for a proper crust
Heat a large skillet over high heat until very hot. Add oil, then add steaks. Sear **2–3 minutes per side** (for medium-rare depending on thickness), until a deep brown crust forms. Add **1 tbsp butter** in the last 30 seconds and spoon it over the steaks. Transfer steaks to a plate to rest.
Step 3: Build the Diane base
Reduce heat to medium. Add the remaining **1 tbsp butter**. Add shallot and cook **1–2 minutes** until softened and lightly golden. Add garlic and cook **20 seconds** until fragrant.
Step 4: The twist: peppercorn punch + glossy depth
Add the **1 tsp crushed peppercorns** and tomato paste. Stir for **30–45 seconds** until the paste darkens slightly and clings to the pan (this removes rawness and boosts savoriness).
Step 5: Deglaze & reduce
Stir in Worcestershire and Dijon, then add beef stock. Scrape up the browned bits from the pan. Simmer **1–2 minutes** until reduced by about half and smells rich, not watery.
Step 6: Finish creamy and balance
Lower heat to medium-low. Stir in cream and simmer **2–3 minutes** until it coats the back of a spoon (draw a line with your finger; it should hold). Stir in lemon juice. Taste and adjust salt/pepper.
Step 7: Serve
Return steaks (and any resting juices) to the pan for **30 seconds** just to warm through. Spoon sauce generously over. Finish with parsley if using.
