Step 1: Make the quick “crema”
In a small bowl, mix Greek yogurt with a pinch of salt, black pepper, and 1 tbsp water to loosen to a drizzly consistency. Set aside (this adds protein and helps tacos feel satisfying without heavy cheese).
Step 2: Season and sear the chicken
Pat chicken dry. Season with cumin, paprika, garlic powder, salt, and pepper. Heat oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until deeply browned and cooked through (165°F/74°C for breast; thighs can go a bit higher and stay juicy).
Step 3: BBQ-glaze and shred
Reduce heat to medium-low. Add BBQ sauce plus reserved 2 tbsp pineapple juice. Turn chicken to coat and let it bubble gently 2–3 minutes until thick and sticky. Shred or chop the chicken in the pan (two spatulas works well) and toss to coat.
Step 4: Char the pineapple & jalapeño
Push chicken to one side of the pan (or use a second pan if easier). Add pineapple chunks and jalapeño slices to the hot surface. Cook 2–3 minutes, tossing once or twice, until the pineapple has caramelized edges and the jalapeño softens and turns spotty-charred.
Step 5: Warm tortillas
Warm corn tortillas in a dry skillet or directly over a gas flame 10–15 seconds per side until pliable and lightly toasted. Stack in a towel to keep warm.
Step 6: Assemble GLP‑1 friendly tacos
For each taco: add a generous handful of cabbage first (fiber base), then BBQ chicken, then charred pineapple and jalapeño, and a small pinch of red onion. Drizzle with yogurt crema. Finish with a squeeze of lime if using.
