Lean protein + fiber-rich beans and crunchy veg make these budget-friendly tacos filling, nutritious, and family-approved with minimal oil and tons of flavor.
Step 1: Season the chicken
In a bowl, toss chicken with cumin, chili powder, paprika, oregano, salt, pepper, and garlic. It should look evenly coated and slightly paste-like; add 1–2 tsp water if needed to help the spices cling.
Step 2: Sauté the veg
Heat 1 tbsp oil in a large skillet over medium-high heat. Add onion and bell peppers with a pinch of salt. Cook 6–8 minutes, stirring, until softened with some golden edges. Transfer to a plate.
Step 3: Cook the chicken
Add remaining 1 tbsp oil to the same skillet. Add chicken in a single layer. Cook 3–4 minutes undisturbed until browned, then stir and cook another 3–5 minutes until cooked through (165°F/74°C for breast; thighs are best around 175°F/80°C for tenderness).
Step 4: Warm the beans (quick “refried-style”)
Add black beans to the skillet with 1/2 cup water. Simmer 3–4 minutes, then mash about 1/3 of the beans with a spatula to thicken. You want them saucy, not dry—add a splash more water if needed. Taste and adjust salt/lime.
Step 5: Bring it together
Stir the cooked peppers/onions back into the skillet. Squeeze in half the lime and toss for 30 seconds until everything’s glossy and well mixed.
Step 6: Warm the tortillas
Heat tortillas in a dry skillet 20–30 seconds per side until warm and pliable, or wrap in a damp paper towel and microwave 30–45 seconds.
Step 7: Build tacos
Fill tortillas with chicken-bean mixture. Top with cabbage, diced tomatoes, and a squeeze of lime. Serve family-style so everyone can assemble their own.
