Silky, fragrant pumpkin-coconut soup perfumed with Thai-style spices, finished with a punchy, crunchy chilli oil that makes every spoonful feel restaurant-special.
Step 1: Start the soup base
Heat 2 tbsp oil in a large pot over medium heat. Add onion and cook until soft and sweet, 5–7 minutes, stirring occasionally (you want translucent with a hint of golden at the edges).
Step 2: Bloom the aromatics & spices
Add garlic and ginger and cook until fragrant, 30–60 seconds. Add coriander, cumin, and turmeric; stir for 30 seconds to toast (the pot should smell warmly spiced, not burnt).
Step 3: Simmer the pumpkin
Add pumpkin chunks, stock, 1 tsp salt, and a few cracks of pepper. Bring to a boil, then reduce to a lively simmer. Cook uncovered 18–22 minutes, stirring once or twice, until the pumpkin is completely tender (a knife should slide through with no resistance).
Step 4: Blend until silky
Turn off heat. Blend until smooth using a stick blender in the pot (or carefully transfer to a blender in batches). If it’s thicker than you like, splash in a little water or extra stock.
Step 5: Finish with coconut & balance
Stir in coconut milk and warm gently over low heat for 2–3 minutes (don’t hard-boil or the coconut can split). Add lime juice, and optionally sugar, then taste and adjust salt. You’re aiming for: creamy + gently spiced + a bright lime lift.
Step 6: Make the crispy chilli oil (the “special” twist)
In a small saucepan, heat 1/3 cup oil over medium-low. Add chopped garlic and cook 1–2 minutes, stirring, until lightly golden (watch closely—garlic goes from golden to bitter fast).
Step 7: Serve
Ladle soup into bowls. Spoon a generous swirl of crispy chilli oil over the top, making sure you get both the red oil and the crunchy bits. Finish with extra black pepper and a squeeze of lime if you like.
