Step 1: Steam-soften the potatoes & onion
Set a steamer basket over simmering water. Add the sliced potatoes and onion, cover, and steam until *very tender and easily pierced*, 12–15 minutes. (This keeps the tortilla soft and non-greasy.)
Step 2: Heat the oven & pan
Preheat oven to **190°C / 375°F**. Lightly brush a **20cm / 8-inch** oven-safe nonstick skillet (or small baking dish) with **1 tbsp oil**.
Step 3: Whisk eggs
In a bowl, whisk the eggs with **salt and pepper** until well combined and slightly frothy.
Step 4: Combine
Gently fold the hot, steamed potatoes and onion into the eggs. Rest **2 minutes** so the potatoes start to soak up egg (helps the tortilla set tenderly).
Step 5: Bake until just set
Pour into the prepared skillet/dish and smooth the top. Bake **12–15 minutes** until the center is *just set* (it should jiggle slightly like soft custard, not slosh). If you want a little color on top, broil/grill **30–60 seconds** (watch closely).
Step 6: Rest & serve
Rest **5 minutes** (it finishes setting). Slice into wedges. Season with a pinch more salt and pepper if needed.
