Step 1: Preheat & set up
Heat oven to **400°F / 200°C**. Set out **4 small oven-safe ramekins** (about 8–10 oz each) on a baking tray (for easy handling and catching drips).
Step 2: Sauté onion & garlic
Melt **butter** in a large skillet over **medium heat**. Add **onion** with a pinch of salt and cook until soft and sweet, **5–6 minutes**. Add **garlic** and cook until fragrant, **30 seconds**.
Step 3: Brown the mushrooms (key for flavor)
Add mushrooms, **thyme**, **pepper**, and a small drizzle of **olive oil** if the pan looks dry. Increase heat to **medium-high** and cook, stirring occasionally, until mushrooms release their liquid and then the liquid evaporates and the mushrooms start to **turn golden at the edges**, **10–12 minutes**. (If you stop while they’re still watery, the filling will be bland and loose.)
Step 4: Make the creamy sauce
Sprinkle over the **flour** and stir constantly for **1 minute** to cook out the raw flour taste. Slowly pour in **vegetable broth** while stirring, scraping up any browned bits. Simmer **1–2 minutes** until slightly thickened. Add **heavy cream** and simmer gently until the mixture coats a spoon, **2–3 minutes**. Taste and adjust salt.
Step 5: Add Gruyère & fill
Off the heat, stir in **3/4 cup** of the Gruyère until melted and silky. Divide filling between ramekins, leaving about **1/2 inch** headspace. Sprinkle the remaining **1/4 cup** Gruyère over the top.
Step 6: Top with puff pastry
Cut puff pastry into **4 circles/squares** slightly larger than the ramekins. Lay pastry on top and press gently around the rim to “seal.” Cut a **small slit** in the center of each for steam to escape.
Step 7: Bake until deeply golden
Bake on the tray for **18–22 minutes**, until the pastry is **puffed and a deep golden brown**. Rest **5 minutes** before serving (the filling thickens as it cools slightly).
