Lean, omega-3-rich salmon is oven-baked with dill and lemony brightness, served with fiber-packed rye berries and tender asparagus for a deeply nourishing Nordic-style dinner.
Step 1: Cook the rye berries
Rinse the rye berries in a fine sieve. Add to a pot with 2 1/2 cups water and 1/2 tsp salt. Bring to a boil, then cover and simmer on low until tender but pleasantly chewy, 20–30 minutes (start checking at 20). Drain any excess water, then spread on a plate to steam-dry for 2 minutes (this keeps the salad from getting soggy).
Step 2: Heat the oven & prep the tray
Preheat oven to **200°C / 400°F**. Line a sheet pan with baking paper for easy cleanup.
Step 3: Season the salmon (Nordic-style, bright and herby)
Pat salmon dry (this helps it roast rather than steam). Sprinkle both sides with **1/2 tsp salt** and **1/2 tsp pepper**. Rub with **1 tbsp olive oil**, **half the chopped dill**, and **half the lemon zest**. Set salmon on one side of the tray.
Step 4: Prep asparagus for quick roasting
Toss asparagus with **1 tsp olive oil**, the grated **garlic** (if using), and a pinch of salt and pepper. Lay asparagus on the other side of the tray in a single layer.
Step 5: Bake until just-cooked and juicy
Bake for **10–14 minutes**, depending on thickness. The salmon is ready when it flakes easily at the edges and the center is slightly translucent but warm (or **52–55°C / 125–131°F** internal for medium). Asparagus should be crisp-tender and lightly blistered.
Step 6: Make the dill-lemon dressing
In a bowl, whisk **1 tbsp olive oil**, **2 tbsp lemon juice**, remaining **lemon zest**, **Dijon** (if using), **honey** (if using), and a pinch of salt and pepper. Taste: it should be lively and lemony—adjust with a pinch more salt or a small squeeze of lemon as needed.
Step 7: Assemble the rye berry salad
In a large bowl, combine cooked rye berries, **red onion**, **cucumber**, remaining **dill**, and the dressing. Toss well and let sit **2 minutes** so the rye berries absorb flavor. Taste and adjust seasoning.
Step 8: Serve
Plate a generous scoop of rye berry salad with asparagus and a salmon fillet. Finish with extra dill and a final squeeze of lemon if you like.
